Gochugaro, garlic, ginger, onion, fish sauce, and sugar form a thick red paste. You stir it all in there. Then you put it in there and you ferment it, right? You pack the glass jar tight, pressing down, get all the air out. And then you wait for fermentation. You let the jar sit at room temperature for one to five days. One to five days isn't insane. Yeah. What? Well, the more days, the more fermentation. Once it smells sour and tastes to your liking, then you put it in the refrigerator.
