8:05Prue Leith:Janet is great. I'm a bit nervous she's not here anymore. Oh. Where's she gone? What have you done to her? Well, no, she doesn't come in. She stays out because she has lots of work to do, doesn't she, Joe? She does everything other than the podcast. She does the accounting. She does sort of operational stuff. She's got a lot of health and safety. She's HR as well. She makes coffees that then she has there for you. She's also really nice to the guests. Yes. That's why I need her. 9:16Prue Leith:I've never seen him not with shorts, but then you mostly only see the top of you. What? But you have got... Prude, bending under the desk to have a little look what's going on. I'm just having a look. You have got boots on or shoes on and socks and then nothing, nothing, nothing, nothing. Fuck. Prude just had a glimpse of a soggy bottom.

9:42First thing I ask every guest to do is to fill out the intake questionnaire. Are you prepared to begin?

9:48Prue Leith:Yeah, sure. You're sitting comfortably? Yeah. Happy? You're the boss, aren't you? Fuck, I'm going to struggle with this one. You've really taken this thing about Janet being the only nice one on board. You're never normally this lovely. Okay, fine. Okay, here we go. Full name. Well, I just call myself Prue, but I suppose my full name is Dame Prudence Margaret Leith. Wow. Dame. That's cool, isn't it? That's a joke. It's a joke. Was it a joke? No, it's real. That's real. It's real. It's real. But it always makes me laugh because I just can't believe that anybody would make me a dame. I'm so dame-like.

10:30Prue Leith:However, that's lovely. What sort of benefits do you get from being a dame? Well, I tell you what, you get a coat of arms, for example, and my husband has had such fun because you can put anything you like on your coat of arms. So I have a cat I'm very fond of. So, you know where some people have lions doing this sort of rampant lion like that? I have a pussycat doing that. And then I said I'd like a cooking pot and a saucepan and a wooden spoon because that's what my career's been. And the nice herald guy said, well, they have to be sort of medieval. So they've given me a sort of witch's cauldron with flames underneath it.

11:14Were you happy with that?

11:15Prue Leith:Yes, but it does look like a witch's cauldron rather than a cook's pot. Right, so just to clarify, you've got a pussycat, a saucepan and some utensils and a witch's cauldron as your coat of arms. And a book. That's fucking cool, isn't it? You know, if you're a man, you get knighted. Yeah. I wanted to be knighted on my shoulder. The old sword. But I got this damehood in the middle of COVID. So I had a letter that said, I'm really sorry, but there's such a stack up of people who need knighting because it's COVID that we won't be able to do you for four years. But you have the right to be damed by a member of the royal family.

12:00Prue Leith:But you have to wait. You might have to wait for four years. And I thought I might not have four years. I'm a bit old. So I thought, no, I don't want that. I said, or you can get the local lieutenant to do it, you know, in your, wherever you are. Or you can get it by post. And I thought, I don't think I want my damehood by post. Well, they send you a sword by post to like knight yourself and then you have to post it back. You don't get a sword. You just get somebody who goes, come closer. arise Sir Joe and you are a knight you need on the ground and they do that to you I think you'd have to wear trousers I'm not fucking doing it then

12:53Occupation Cook Okay Just cook Yeah

13:00Prue Leith:Well I suppose chef is always paid for it It's professional. Whereas cook is... You can do for fun. You can be, yeah, you can do it for nothing at home. So what's your favourite food to cook then? I like savoury food. I'm really bad at cake. People think that because I judge a bake-off for years that I must be a fantastic baker. But I'm not. I'm just a really good set of taste buds. I can tell good cake from bad cake and tell you what's wrong with it. But I tried to make hot cross buns last week, and I had two attempts at it. And I'll tell you what, I needed Paul Hollywood at my side because it was a disaster.

13:42Prue Leith:Describe your personality as a cake. As a cake, I think I am a lemon or orange polenta cake. I think it describes me because it's quite substantial. It's not all airy and moussey. and lots of people like cake, which is more like pudding. You know, it's just mostly cream and whisked egg whites and meringue and things like that. This is cake. Yeah. Solid cake. It's got some density to it. Yeah, some density and I think I'm like that. Some coarseness. Some grittiness. All of that, that's me. Yeah, yeah. And a bit of zest. Zesty. Yeah, so it's full of lemon. Does that hit me right at the start or does it hit the back of the throat at the end?

14:25Prue Leith:No, right from the beginning. From the beginning. From what you know of Joe so far, what cake would describe him? Oh, fucking hell, here we go. Who else does this? Well, come on, you're the shrink. If I had to be a cake, Jake, see what I've done there? Yes. Yeah, thank you. I would probably be, what's a blancmange? I've been described as a blancmange lots. Well, it's a pudding, but it'll do. Okay, I'm like a blobby blancmange. That's what I would be. I wouldn't say you're blobby. No? No. Okay. Have a feel. Have a feel. Have a feel. That is not blobby. I mean... For the audio listener, Prue's poking his least blobby part.

15:06Prue Leith:You could stop exercising. Why don't you? Well, because then I will look like a walking blamange. So you've got to keep a little bit up. Do you know what I mean? I mean, it takes somebody who never exercises to tell with this. There's a guy who really does. I'm just having a moment here, Prudence, where you've just... You've just prodded both of my chest areas. Is there other bits I should prod? It's quite surreal. What? You've brought out a bashful side of him here. Are you saying to me that that's just a breastplate, metal breastplate, so you will feel nice and hard? Might as well take the jacket off and just show us what you've got going on.

15:46I am the boss. Yeah, exactly.

15:49Prue Leith:I mean, what is this? Jake is my research assistant, but somehow there is a bit of an authority crisis going on. He wants to be here, doesn't he? He definitely does. He wants to be here. And he's more than capable of doing it mentally, physically. He can't do it because I've beat fucking up. And if I prodded him, he'd disappear.

16:15From what I can gather, you've got a new book out, haven't you? Right, hang on. Thank you. Just conveniently placed in my left side drawer. It's all about getting older. Embracing getting older, is it? Not getting older.

16:28Prue Leith:Being old. You know, when I said to my publishers, I'm going to write a book called Being Old, and they said, oh, I don't think we can have that title. It's so negative. That's the point. I want to write a book about it not being negative. And being old is not the end of the world. And they said, oh, I think we'll have to call it Being Older. And I said, no, I'm not interested in being older. I'm talking about being old. So it's about embracing getting old. Well, yes, if you can. I mean, obviously, there's some people who are having a horrible old age. They want to pretend that it's lovely for everybody.

17:03Prue Leith:But what I don't like is the general idea that being old is the worst time of your life. And of course, it is the end of your life in the end. But the truth is, I don't think people have a horrible, more horrible time. or, I mean, it's no different from any other part of your life. I mean, I remember my teenage years, and I think they were quite horrible. The most lovely thing about being old is you don't give a toss what anybody thinks. Well, I want to use that embracing getting old, getting older. Okay. In our session, and really take that principle and push it as far as we can take it. Shall we do that?

17:46I think that's exactly what we should do. I think that should be the theme of this session.

19:39Prue Leith:there were three of us, two brothers and me, and I mean we always had the impression that I mean they were behind us with whatever we wanted to do and they were endlessly encouraging and so it just never occurred to me my brothers have been more cautious but with me I never occurred to me that I fail I still don't ever think I'm going to fail but I think that I have always been forward-looking and optimistic and and confident often confident when I shouldn't have been but I've always had an optimistic attitude. I look at you and I go, wow, she's fantastic. You look wonderful. Really? Right from your glasses down to your necklace of, I don't know what to describe them.

20:30Prue Leith:Oh, I'm very proud of this. Have you always been a fashionista then? Have you always been into your fashion? I've always loved colour. I've always loved colour. I've never really been a fashionista in the sense of buying magazines about clothes or going to, you know, fashion things. But I've always loved colour. What do you think mine and Jake's fashion levels? Do you think we need any? Well, I like your specs. Just the specs? I like, actually, I really like the sort of country tweed look on top. Sure. The middle bit is a bit of worry. It was in the midriff. No, yeah. The shorts. From the waist to the knees.

21:10You don't like my shorts, it's fine.

21:11Prue Leith:Well, I can't see your shorts. I don't know about. What about Jake's... The suit doesn't fit. I think we know that. Well, I'm not sure it's the fit of the suit. The colour of the suit, the cut of the suit and the fit of the suit? All of it, I'd say. Yeah, just the package. Just the package. What do you think Jake could maybe improve? A bit more colour to him? I know. He's really together. Are you interested in fashion?

21:41I am, but do you know what? It's hard to have the confidence to try something new when you have friends who maybe don't give you that support when you try something new, turn up something new, and they say, oh, what's that now? Take the mickey. Colleagues. It comes down to that thing you were saying earlier about just not caring about what other people think. And that's when the confidence of fashion can come, I think.

22:00Prue Leith:Well, if it helps at all, I think you look quite cool. Oh, thank you very much, Prue. And we've got some other glasses as well. What do you mean? Did you pack me some more glasses? What? Fucking hell. No. Oh, my goodness. I don't know if there's any that Prue might want to wear for this. That are up that street. Oh, this is Prue all over. That's very Prue. What about them? Where did you get these? They're just all sorts of initials. Look at them. That's very Prue. Wow. I worry that you won't take me seriously anymore if I keep these on for the rest of the session. Joe, I hate to tell you, but I'm not taking you seriously ever.

22:56Okay, so you've talked about not giving a shit and like just embracing a little bit of advice to Jake there and you've said take a leith. Yeah, take a leith out of Proust. Out of Proust. No, that was my line. Sorry, sorry. No, I was nearly close to finishing it. You were just taking 20 minutes to get there, sorry. Right, I'm going to give you some scenarios and work out whether you really give a fuck about them or not. Whether you're, you know, embarrassed to do so or... Let's put you to the test, Proust. Singing to yourself in public.

23:28Prue Leith:Well, I'll tell you what, I can do that now. I can sing now. All my life I never could sing at all. And then I was asked to go on Masked Singer. Ah, yes. And they said... It's quite public. That is quite public. Yeah, quite public. And they said, I said, I can't sing and I'm turned deaf. And they said, don't worry, we've never had a failure yet. Come on, we'll teach you to sing. And I thought, this is my chance. I've got six months before the actual show. And it's my one chance of learning how to sing. So I said yes. Well, of course, I very quickly discovered that the budget that they have for teaching non-singers to sing would never crack it.

24:08Prue Leith:I needed more help than that. So I got a private coach, a singing coach, lovely guy, and he taught me to sing. And, you know, after six months of this, I went on My Singer and I did it. and I can now, what I'm left with, which is absolutely wonderful, is that I can now... Sing in public. ...Easter Day. I was trying to tell my son about a hymn, an Easter hymn that we used to sing as kids at school. And I said, do you know the hymn Hail Reef Festival Day? And he said, what is that? I can't do that. And I said, so I sang it to him. I actually sang it. And there were lots of people there. And I suddenly thought, you know, he taught me to manage to do it regardless.

24:56Prue Leith:I'm sure I wasn't in tune, but I managed to make a noise. I'd love to know how that hymn goes, but... Hail, we festival day, best day that hallowed forever. Day where in Christ arose, breaking the kingdom of death. Something like that. So, shoot. And it's not proper singing. I know I can't sing, and I'm sure it wasn't in tune, but at least a noise comes out. No comment. It was a great noise. And clearly you don't give a fuck about singing in public at all. No. What about sending food back in a restaurant? Oh, no. Can't do it. I can't do that. Oh, no, I can't. What? You can, you do. I not only can do it and do do it, But I also think you owe it to the restaurant to tell them that they've not got it right.

25:52Because if they're making something which is really horrible and they're upsetting their customers because they're paying a lot of money for it, they're not going to come back. Yeah.

26:03Prue Leith:And if they get it right, you know, if you say to them, look, there's so much salt in the soup, you can't swallow it. They're going to go and taste it, which they probably haven't done. Yeah. And not serve it to the next customer. You should always tell them what's wrong. What would it take you to poo at someone else's house? Do you think that's bad manners? To use a toilet that's there to be used? No, I don't think so. I would use it. You would use it? Yes, of course I would. What? You would poo in someone else's house? Well, in the loo, yes. Not on the lawn.

26:42Have you ever said yes to something that's got you into like a risky situation or risque situation. See what I did there, Jake? Yeah, you just sort of made it a bit more French, yeah.

26:56Prue Leith:I'll tell you what, this was many, many years ago when I was about 19 and I was a student in Paris and a friend of mine, an American friend, said, come, let's go to a party. And you know when you're a teenager, you'll go to any party, won't you? Sure. Just, if somebody can get you into a party, then you're there. You're there. Yeah. So I said yes. And we went miles out of town to this house. And when we went into the house, we banged on the door. And the door opened a tiny crack. And somebody looked at us and said, who are you? And took us ways to talk our way. And we were friends of somebody who was friends of somebody.

27:37Prue Leith:And we managed to get in. And when we got in, it was just these rooms full of totally naked people. Lots of, I mean, you just saw a sea of bouncing bums. What? Honestly, it was an orgy. And they were... Well, hang on a minute. Hang on a minute. I need a second to process what you're saying, Prue. Well, I thought I was going to... Real naked bums? Real naked bums. Lots of them. And lots of people in two different rooms. But there was monking going on everywhere and everybody was naked. Did you know it was going to be an orgy? No, of course not. That was the thing. I didn't know. I thought I was going to a party.

28:18Prue Leith:It was a party. Well, yeah. Anyway, so there am I standing like an absolute idiot at the bar, fully dressed, and feeling such a fool because everybody came up to me and they kept saying, get your kit off. Why are you here? And I realised that having clothes on when everybody else is naked is the most conspicuous thing you can do. I was getting so much attention because I had clothes on. You're the weird one. Yeah, you're the weirdo. So guess what? I stripped off because I thought I've got to cope with this somehow. And then it was fine. I could stand at the bar and just have a drink and sort of talk my way out of any, you know, I'm waiting for somebody or my boyfriend's next door or something.

28:59Prue Leith:Just any excuse not to have to join in. And then finally he arrived and we went. He came back, I have to say, looking extremely satisfied.

29:11Prue Leith:And off we went. So if you're asking me if I ever done anything I regret, well, that wasn't what I... I mean, in a sense, I don't regret it because it was funny. And it was... And you didn't know it was coming. And I didn't know it was coming. No. And you didn't go back. No, and I didn't go back. No, no, that was your last one. That was my only orgy I've ever been in.

29:43Right, Prue, it is time for one final exercise. I want you to continue to try new things.

29:50Prue Leith:Okay. Yeah. But sometimes it doesn't have to be bungee jumping or swimming with sharks. You spent a career trying the most pristine bakes, but now for the first time, I want you to review the bakes of the people. Okay? Okay. Which is why I've bought you one of every item from Greg's. Here we go. We've got one of every single bake there. Let's get rid of Newton's apples. Right, they're not all savoury too. Sure. What have we got? We've got chicken bake, steak bake, cheese and onion bake, sausage bean and cheese bake there's a lot of bakes here do they what's that one vegan sausage roll bacon and cheese wrap this looks very anemic it needs more longer in the oven don't you think is that no good not so good I'll be honest they all look quite the same but I think I would like the bacon and cheese one or the cheese and onion one right okay cheese and onion You want cheese and onion?

30:56Mind fingers? Yeah. I'll just take the stick out for you. So, what do we... Let's review that. I'll be honest.

31:07Prue Leith:I'll tell you what, the thing about puff pastry is you really need... It's hot. Hot. And this is stone cold, so it's really doughy. And, you know, the whole point about puff pastry is it should be flaky and it should be shards all over the place. and it needs to be hot, at least recently baked. Then when this was baked. Well, you'll have to take it up with Janet. Filling's nice. Oh. By the way, you really dismember that. Did you see it? It could have longer in the oven anyway, because that's not properly baked. No. Why is that not properly baked? Well, not in the oven long enough. No, no, no, no.

31:56How do you know that it's not properly baked? What, because it's wet and soggy?

32:00Prue Leith:Wet and soggy and not flaky. And then this middle, which was advertised as cheese and onion. It's a cheese and onion bake? Yeah, cheese and onion. Well, it is quite cheesy, but it's mostly white sauce. White sauce, no good. It's all right, but I was hoping for real cheese and fried onions. Oh. You know, it would be delicious, wouldn't it? So this is a sort of rather soupy. Are you enjoying that? No, but it does taste quite good. I think if it was... It tastes quite good. But you've just said it was underbaked. Yeah, I was complaining about the texture, not the flavour. But the flavour's nice, even though it's white sauce, gloopy soup.

32:47Prue Leith:Yeah, it's quite a nice flavour, but it could be nicer. I honestly thought you'd just be turning your nose up at it. No, no, no. Fuck this. What do you usually get from Greg's Prue? The anemic sausage. I think I would still go for that. I mean, it does taste quite nice. I want to say you've tried something new. You've tried a wet, soggy cheese. I've never tried one of them before. So we've achieved trying something new. Trying something Prue. Trying something Prue. Something Prue new. this is the moment, isn't it? Prue-leaf, Prue-leaf, Prue-leaf, Prue-leaf. Thank you for coming on and trying something new.
