I've got a question I'm hoping you can help me with. It's about my mum. She's a really great cook. Love her food. however her food hygiene practices leave a lot to be desired um me and my siblings have been food poisoned by her quite a few times now um so for instance things she'll do is like she will take a um i don't know a packet of chicken out of the fridge an hour before she's got to cook it to come to room temperature uh i don't know why she does this she thinks it cooks it more thoroughly but obviously it's just like generating bacteria before it goes in the oven uh how do i broach this subject of like look mom can you stop food poisoning us without her getting offended i don't know she'll just say like we don't like her cooking and she does not like to be criticized by her children yeah any advice much appreciated thank you bye okay i'm gonna do an impression now and you won't see what it is I'm doing the impression of, but I just want to give you listeners and viewers a bit of an insight.

Listen, I think eating dead chicken is morally reprehensible, so I don't care how you bring it out of the fucking fridge. But what, because it makes it, you don't want to, it's a muscle, isn't it? So like it contracts. If you cook it and it's like from cold, it like goes, and it gets really tough.
13:35Shanthi Ranganathan:You are absolutely right. So you need to let it come to room temperature. I don't cook chicken if I put it in the freezer, straight from the freezer. I leave it until it's completely thawed. Right. Then I cook it because all the juices will get in. If it is frozen one, it doesn't taste the same. It's nice. It's horrible.

You can stir fry it in what, like eight minutes, nine minutes? Yeah. Right, so I don't know how much she's under cooking it then if it's a nine minute. Maybe she might be oven cooking it then it's about 20 for a breast and depends whether it's got the bone in it.

Every time I say I'm dieting, she gets personally offended and responds by feeding me mutton curry, mutton rolls, string hoppers, sambal and kottarati.

21:52Shanthi Ranganathan:Sri Lankan mother doesn't talk like that. Like a mad woman. It sounds like a mad woman. Oh God, I don't talk like that, do I? it's exaggerating you are okay if you tell me that you are going on a job why would i disturb you
22:12Romesh Ranganathan:okay yeah no i won't do that listen um jordan i do actually have some advice for jordan yeah please go ahead uh your mom loves cooking for you she loves seeing you eat her food we are talking about i believe what we're talking about is a quantity problem so i i think that rather than saying you don't want to eat her food at all i think you need to find a way to fold in her food into a healthier kind of gains-based diet yeah you need to you know watch your protein if you're trying to get lean you're looking at trying to maintain a calorie deficit you can eat mutton rolls and string hoppers and cotterotti and all that and still be on a calorie deficit so you know what you what you're not doing is you're not cutting your mom's cooking off at all.
22:59Romesh Ranganathan:But you just say mum, and you can frame it in a really positive way, you can say, mum, I love your cooking. But that's proven to be part of the problem, because you're cooking so delicious. I'd like to find a way to still enjoy your cooking, but also figure out a way for me to feel like, you know, I'm moving towards the targets I want to move towards. And with your mum, work out a way of eating sort of more, less calorie dense food, a more nutrient dense food. But also So having the mutton roll and everything. One of the mistakes you can make is thinking that these foods are bad and these foods are good.
23:31Romesh Ranganathan:Actually, it's about balancing all of that together. So you don't have to cut it all off. You can find a happy medium. And hopefully you'll then grow into a happy medium. Like you. Little pun. I'm not medium. I'm XL. Even on a good day.
