2:55If you're just going through the motions and you become bitter and you're walking around, you know, moping or miserable or you, that's not good for both sides. And the reason I can be at peace with that now is because I know that then that's not going to be the best for the whole picture, the team, the customer, the customer will suffer. And it takes a while to get there because in kitchens we're always like yeah but there's a mise en place and we need to hold on to them and we need them we've got to we've got to hold on to them and that and I talk with you know all of my head chefs and my sous chefs and I'm like let me tell you this the ship will always sail and if you've got a good core strong team the core people around you you'll always and it goes back to make it happen but don't have people in the team that are disruptive or don't believe in it because what that then does it spreads and bleeds into everything because so often what i found is those people who don't believe in it generally won't come up to the level that you want them to be they'll end up dragging the team around them down to where they think it should be and for me i'd rather be a little bit more in the shit a little bit more like running like running around but be running around with a group of individuals that absolutely want it rather than having a full team but a couple of them are bad eggs thank you so so much for listening it honestly means the world to me i hope you enjoyed your morning coffee and go and have an amazing day let's be having ya if you want the fun episode it will be in the show notes a link will be in the show notes the full episode thank Thank you so much.
