0:45Every time I go back home and I go to Miami, I enter the house, you know, put down my luggage. and one of the things that you do that my dad does always is, oh, let me make you una quesadilla, no? What is that? A quesadilla. A quesadilla. A quesadilla. Oh, I love quesadilla. And like I said, we don't... I love... Describe it. What's your recipe for that? Actually, what is your recipe? You just put the tortilla and cheese? Maybe every Mexican, when they're hungry at the end of the day, they would do a quesadilla. Yeah. A quesadilla is just the tortilla with cheese. Yeah, I love it. Queso is cheese, so it's quesadilla.
1:24But then we learn to do quesadillas from everything. It could be whatever is missing, whatever you didn't eat during the day, you eat it at night. So it could be pork, could be meat, could be chicken, could be anything. And so it's my way of saying hello to her. It's your welcome to me. It's your welcome. It always has been. Yeah, you're saying. And then it's just the quesadilla. It could be corn or it could be flour with any type of cheese or meat. and then you fold it and there always has to be a little bit of spicy sauce. Without the spicy sauce, without the sauce, it doesn't taste the same.
2:03Always avocado. My brother used to say that a house without lemon and avocado is not a house, it's not a home. Which is funny because that's something that unconsciously, wherever I go, literally, I always look for an avocado and lime everywhere. And I put, I probably destroy recipes and whatever I'm eating because I put lime and everything. So that makes sense. So it's the quesadilla and the other way of saying hello is, the only thing I can do is a pretty good Bloody Mary. Oh. Yeah. Very spicy. What one of those? Yeah. What is your Bloody Mary recipe? Well, it is with clamato. Yeah. The clam juice.
2:41Yes. Yeah. A lot of lemon, very spicy. with a little bit of olive oil. Oh, I didn't know that. I've never seen it. It makes it... It almost sounds like a gazpacho gelato. Well, maybe it's a gazpacho on the Mexican side. Yeah, yeah. So the olive oil makes it, I don't know, just easier for the stomach and just to taste it. And, of course, I cannot even pronounce the name of the... Oh, yeah. ...of the... The Westershire? No, we'll add it. Westershire. What is it? Worcestershire. Okay, well, yeah. Worcestershire. That's okay, forget it. I can't do it. But the Bloody Mary has to be almost black. Oh, so you put that much in.
3:26A lot of it. We were discussing. I'm American. I didn't know it's in Worcestershire, but there are anchovies in Worcestershire sauce. We were discussing it when we were just on vacation in Hawaii, and we were talking about Worcestershire sauce. apparently I thought it was vegetarian so without that sauce it's not the same so it's got to be almost almost black and just a tiny bit you don't have to drink a lot of it and then with that we say hola salud hello and then I welcome them a couple of months ago I had the privilege of eating at the house of Jose Andres oh did you yeah so he cooked a wonderful yeah but my question to you is he didn't eat he didn't eat yeah I think a lot of chefs don't eat really in their restaurants well i eat but um yeah but it was it was a wonderful food cooking all day and you're in that kitchen and you're tasting it's kind of i don't know it's a it's a funny thing about it he didn't need a bite a bite yeah but but then he was extremely um i mean he was putting a lot of attention on the fact if we liked what he was serving or not every single plate did he he asked you he was he asked yeah yeah it's a performance is there any security yeah well cooking is a bit of a performance you know you you make something that you think is you know really special really delicious and then you serve it and then you know we have an open kitchen so i always kind of watch to see whether somebody's shared it oh yeah all the time my son always tells a story about cooking for his brothers a big pasta with zucchini and um and uh and their wives and he brought this big bowl of pasta out and said and They just ate it.
5:06He said, excuse me, did you all like this? And one of his daughter-in-law, sister-in-law said, what is it with you Rogers and crazy?
