0:36May I say the Nemesis, I think, is probably the greatest chocolate cake ever created. I just love that cake. Well, we kind of agree. I mean, it's just, it's perfect. I almost, you know what, I don't need to write a book about chocolate. No, no, no, no, you do. I write a book about Nemesis. I could just have Nemesis every day. What do you like about it? I love, I love the fact that it has this incredibly kind of moist moussey like texture but is also really dense deep dark chocolate flavor this explosion of flavor combined with a really beautiful texture it's also just and I love I love the fact that you cook it in that water bath because you you never get the cake crumb that you do if you just bake you get something that's so kind of in between a pudding and a cake which I think is so beautiful it's just a it's a pleasure in the mouth I like the way you know how to make it did you make it when you were here i did yes i studied because what i really realized is that you you need to whip and whip and whip and whip right and i think that that's a mistake that people often make when they're when they're baking is they think oh i'll just you know put it in the stand mixer one of my favorite two minutes of film is when sean was explaining how to make the pressed chocolate cake and what did you do well i just held the bowl over my head because you're meant to be able to hold the bowl upside down aren't you so the egg white doesn't fall out that's when you know the egg white is stiff enough but i mean i was just showing off it could have gone badly wrong and then i'd have probably got in trouble why are you covered in egg white but the good thing about nemesis is it is it's gluten free so and for anyone that doesn't eat gluten and there's many people now that don't it's even healthy it's a healthy dessert you know it's also healthy because it's not loaded with sugar and so you're just you're getting the depth of the chocolate flavor instead of I think American desserts tend to read sweet when you take a bite of a big American cake the first thing you read is sugar whereas with the nemesis which you read is chocolate yeah I love telling people that the nemesis is healthy I often say that this is a really really healthy dessert only has chocolate sugar and eggs what's unhealthy about that?

2:47Nothing, nothing, nothing. If you have a meal here, you know, it's like, how do you finish a meal at the River Cafe? The Nemesis is, and actually I think all our desserts, it's a strong way to finish a strong meal. I agree. I also love the caramel gelato. Yeah. Which I think you almost, you really take that caramel to a nearly burnt. We used to do it outside because we'd take it so dark that almost you couldn't be in a kitchen. and get that, you know, those fumes. And so I used to, I was sitting outside on the, you know, right outside the kitchen and doing it, doing it darker and darker and darker.

3:26Very sugar. Yeah. It's good. It's so good. And then the sorbet is also super healthy because it has, it's just water, sugar and cocoa. Amazing. Really. I mean, you can add vecchia romana if you want to make it a bit more fun. But it is so, I remember the first time I tried that, I couldn't believe that anything could taste so chocolatey but not have, I don't know, egg or cream or something that would make it so rich. But that is just really good. I think we should always have it on the menu, don't we? Yeah. Yes. You know who loves it is Francis Coppola. And he'll call up before he comes to make sure that we have it.
