1:38Sadiq Khan:If your grandmother was coming for tea or for dinner, what would you make? Well, I've got memories of my nan in Pakistan using a mortar and pestle. to break down the ginger and the onions and the spices she was a hardcore proper cook so I'd be worried about her criticising me so I'd have to make a curry but I'd have to do it properly I'd have to use tomatoes not the tin type I'd have to use original spices I'd have to get proper garlic and peel it and the onions and stuff and I'd do it properly I wanted to enjoy it if you knew there was an apocalypse if you knew that you'd never be able to this might be your last meal and you had like a date to go and get stuff what would you get for just me so my wife teases me so do my girls because i'm actually quite simple so if so if it's if it's english food i love fish and chips it's going to be battered cod and chips with lots of vinegar pickled onion uh that is my go-to more i must have ketchup if it's uh pakistani food it's again very simple it's what we call daljawa so it's lentils and rice and a bit of um uh i like a bit of chicken on the side bungalow chicken on the side as well it's called karai chicken with spices that'd be my goatees and actually if you're speaking to a pakistani chef they say that's a very simple thing to do it's like panarabiyata or you know it's like a fish and chips very simple so i'm a simple guy okay if your wife was really down and you wanted to make her feel happy what would you cook she loves pasta and so yeah pasta she loves pasta and so and again it's I mean I can you know pasta juice is quite easy for me I do she want a tomato sauce but she loves pasta and she likes it when it still parts her straight out of the pan do you all kind of talk to each other do you know the mayor of Paris or do you know the mayor of yeah Minneapolis do you talk to each other we do so there's there's the joy of technology where what it is now is you can communicate uh you know just thank you you can communicate virtually or you can communicate um you know teams zooms and so forth but also there is a network of mayors and so in addition to being the mayor of london uh i'm chair of what's called c40 they're the sort of 100 biggest cities from freetown to los angeles to new york to paris and there's a network of us and we meet regularly we have conferences uh we discuss issues but also we learn from each other yeah so you know what what what I've done that worked you may want to you've ever to do what I've done that didn't work you know what to avoid and there's all fraternity yeah that's it doesn't matter whether you're of the left or the right now you're a Republican or Democrat whether you're Labour or conservative so you know the mayor of Paris and Hidalgo I've sought lots of advice from her about the environment yeah all all the mayors of New York from Mike Bloomberg to build a Blasio to Eric Adams and now Zoran you know I get on and talk to whether it's the mayor of LA Carambas or before Eric Garcetti I'm excited about what the new mayor of San Francisco is doing yeah you know inheritance wasn't great yeah but some of the challenges weren't great and you can learn and the big period of time will be really worked closely together was during the pandemic because we know this awful pandemic began in Seoul South Korea that part in terms of our experience went to Milan and came to us so you know Giuseppe Sala the mayor of Milan you know I was on the on the call you know almost speaking to him daily about how he was doing with a pandemic what we've got to avoid what we're going to do but also things like um how to you remember the vaccine came out yes and certain communities were hesitant about the vaccine uh so if you come from a country originally where pharmaceuticals have taken advantage of you not unreasonably you're nervous about this new vaccine right yeah america and so we were learning from each other what i've noticed is you know prime ministers and presidents are less collaborative with other promises and presidents whereas mayors yeah we are more collaborative yeah we work together and you have power yeah I think we're faster we're more nimble nimble on your yeah I think we're more in touch without it sounds terribly anti-prime ministers and presidents but that is we clunky and slow and more disconnected from the communities where we're close we use the tube we use the bus we're cycling around we are meeting on a daily basis a chef a cleaner a a chief executive, a multinational venture capitalist.

6:00Sadiq Khan:And so it means that we are in tune and we can change and adapt as a consequence, which is really important. But talking about fondant dignities, when you host people, do you find food, something that you want to also show them what it is like to eat? Do you have dinner? Often, you see, what happens is you get people asking for recommendations, and you're really nervous about giving recommendations because, you know, I always say River Cafe, of course. No, no, no, no. But you're always worried about fondant experience, right? because it's on you. And so you don't own it. And so what you do is you give them a choice.

6:30Sadiq Khan:And what I, also, I'm very competitive. Are you? I'm a bit of a show off. I never do that. So, I don't know if you saw this, but recently TripAdvisor said London is the best place in the world for food. It's the best place to eat house. I've been teasing the living daylights that I fell at me saying, by the way, TripAdvisor, number one in the world is London. Any place is fine. Paris, forget it. Yeah. I mean, Paris is so, 1980s I mean come on what do they know about food the French but it is I think one of the reasons why London is number one is there is something for everyone yeah no matter what your palette no matter what your wallet yeah no matter where in London you are that's the other great thing you were very brave coming to here because for those that don't know London the geography of the River Cafe yeah you're not and I say this I love this part of London it's great you're not in the beating heart of our city in terms of the ecosystem yeah so if you're starting a business where you rely upon people coming into your business, you need footfall.

7:31Sadiq Khan:And, you know, you can understand why a restaurateur would have a restaurant in the center of the city. Yeah, you would. And you were incredibly brave for reasons, you know, that were rehearsed. Oh, Richard's office was here. Quite. But aside from people employed in the architect's firm, there aren't really people here. No, no, no. They weren't in those days. We once had an American woman who came and she wanted us to kill her taxi. And we said, you know, sure, we'll call you one. where are you going and she said London yeah there you go and so but the I mean people will now people will now travel to come here because obviously of the reputation yeah there have been times when I've gone to restaurants in the centre that are less full when you know we are also because we have the garden but now it is true yeah and so and so so wherever you're staying in London there's something good to eat wherever you wherever your wallet is something good to eat whatever if you like spicy if you like less spicy if you like certain types of wine there's something for everyone
