In short
The episode argues that India’s major problem isn’t just lack of calories, but “hidden hunger” from micronutrient deficiencies—especially zinc and iron—caused by changes across four stages: soil, crop breeding, food processing/“bliss point” engineering, and modern plates dominated by rice/wheat. It claims these deficiencies lead to impaired focus, fatigue, stunted physical growth, and long-term cognitive damage; anemia rates cited: ~57% of children and ~67% of women. It proposes two solutions: (1) external fixes like fortification/supplements and (2) bio-fortification (breeding crops to carry more micronutrients), presented as lower-cost at scale.
Guest backgrounds
Ravinder Grover, COO of Harvest Plus Solutions; works on micronutrient bio-fortification and the Nutri-Paatshala initiative.
Key claims
Soil zinc is down (speaker cites ~40% zinc deficiency in soil); ultra-processing can reduce nutrients; “bliss point” makes food addictive via salt/sugar/fat ratios. Bio-fortified crops have evidence from RCTs and have scaled to hundreds of millions globally.
Notable examples
Zinc wheat/iron-rich varieties; studies in India (iron deficiency reversed in ~3 months) and pneumonia/sick-day reductions; Kenya iron beans and reduced flatulence via variety changes; Finland selenium policy reducing cardiovascular disease; orange sweet potato and vitamin A deficiency/child blindness.

The most important thing is that when you have no iron, your brain doesn't have blood circulation, you don't have oxygen. If you don't have zinc, then you will keep growth. The child's potential height is not possible. They are mentally distunted. What impact has been now that I am a grown person? As you have a deficiency, first of all, focus is on. Then you will see fatigue. 50 years ago, my father or my grandfather, when they ate roti, they got 56 % zinc. Today it's less than half. What happened was that the roti was not nutritious for 50 years ago?
0:40Now it's not 40 % of India's zinc deficiency. What else is the soil? The seed. The first thing was nutrition. Now it's not nutrition. The third thing is factory level. If you look at it, everything goes in package. in the market. What is the most important thing in the food? The fourth thing is our plate. First, if you can see humans, 6 ,000 types of plants. Today, if you can see, there are 30 types of plants. If you talk about India, there are three crops that are 70 % calories. Rice, wheat, maize. What are the problems? What is your goal? If you look at India, there are 57 % of children with anemia.
1:23There are 67 % of women with anemia. 35 % of children with anemia are here. Growth is not just physical, their mental growth is not only physical. How do we fix this? We can fix it in two ways.
1:39Normally, when we talk about health or fitness, our whole focus is only diet, calories and gym. We think that if we have completed our protein requirements and work out daily, then we are perfectly fit. But there is a very big gap that we are missing. How essential minerals are being made from our food, which is why our body is internally weak. Our guest today is working on this missing gap. I am talking about Ravinder Grover, COO of Harvest Plus Solutions. In this conversation, we will know why zinc and nutrition are less than in this conversation. What is hidden hunger? And what is weak in us?
2:27And what is the early science of micronutrients that we mostly ignore? To know more about Harvest Plus Solutions and the Nutri-Patchala Initiative, check the link in the description.
2:44in simple words tell me main what is the main work? First of all, what is going on in India? We are doing 330 million tons of food produce today's date. And food is tasty. We have processed it well. We have seen it well. We can see food in 10 minutes. So what are we doing? But the biggest problem is the daylight robbery. Nutrition heist. when we had a plate when we had a pizza, when we had a pizza, we had a protein shake, when we had a plate, we had a nutrition to eat. That's the biggest problem. We try to solve this problem. Let me give an example. 50 years ago, my father or my grandfather, when he had a roti, he had 56 % zinc to get.
3:42seven raw chicken сыng rob Stitch I zipper
3:59double so
4:07самого We had purchased calories to be gained. We produced nutrition. So I bought the robbery. I didn't have negative amounts. Of course we had to havearning nutrition. So I was sold myself. And the prostates of this infant. These are the Warrens who hugged us. What did we do now in the 50 years before Pat ? nutritious day not in part 4 the Hee in karen hai. Chara, chara jaga pe chori ho rhi hai. Shurru se shurru karete hai. Khana bantai, soil se shurru ho tii hai, humari journey. Soil mein hum seed dalte hai, seed se crop nikalti hai, or crop wou aage chalke phir humari, wou process ho tii hai, humari plate mein aati hai, hum khate hai.
4:47Ye eek pura cycle hai. Soil mein, abhi 40 % soil mein india ki zinc deficiency hai. 40 % mein. Tho hap sochou, agar soil mein zinc nai hai, toh pass on nai ho ga. Organic carbon generally soils mein ho na chahe hai 5 % That. organic carbon mean that the life it's only .5 % Why that. When you have the revolution after we took that we have we have wise in we have diesemוא
5:29וא We have a fertilizer. We have a fertilizer of our nitrogen. We have a micronutrient fertilizer. We have a reason that we have a fertilizer. We have a compounded because our soil has been cut. So the soil has been cut. So the soil has been cut. One third soil is degraded. We have not been able to do this. This is a big deal. The soil was first. The soil is seed. When the green revolution came, our focus was about how much we were going to grow. So, what did we do in that process? We were breeding seeds, normally, after the green revolution, we had to breed it for yield and not to give attention.
6:04We were not looking at nutrition, more, climate traits, no focus. only one thing was that if wheat yield 2 tons of wheat then I would like to get out of 6 tons. So our one thing was that our focus was that. So that was the need. But what happened in that process? We left the nutrition on the focus. Just like you told us, our seeds were 30 % of the nutrition. So that was the biggest thing. In the old varieties, there was a lot of nutrition. Now there is no nutrition. The third thing is happening in your factory level. Now this food is made in factories. First, our food was minimally processed. There was a little processing, rice milling, wheat, kata, we made it.
6:53If you can see, everything is going in packet. Ultra process goes in the way. Ultra process in food is going in 30-40 % of nutrients. where you go. What is the purpose of that? It's not made up to you. It's made up to you. How to standardize your factories. How to standardize your whole wheat. How to buy a whole wheat. How to buy a hyper-palatable. The salt, sugar, fat ratio adjust your weight. Which you can say, you have multiple reward systems in your brain. active you will get one and then you will get one and then you will get one repeat purchase sale that's the purpose of making it let's point engineering I have never heard of it what happened to you?
7:39so our brain which receptors are in the brain they respond to the ratio salt, sugar, fat there are different combinations sugar and fat you can see in some products sugar and fat some of the salt and fat the point is that that you can eat you think this is the best food then you will take it then you will take it very palatable and you will not come to your body so your body will not come to your body and you will ask more so that's where our nutrition then we will be doing this bliss point engineering so all the food companies do some time to do it if you have a good product then you have to do it because you choose what you do so we live in real world and there people have to be tasty but some companies will do this that the good product will taste and some will do this that the product will taste but it will taste so that's one ultimately we all want to be so tasty or something like that addictive that's my sale no card board no one will eat so the good product will be made the fourth thing that's our plate which is the most dangerous I'll get up early on.
8:55I'll get up at the end of the day one of our Texas Crops which has 70 % calories. Rice, wheat, females.
9:21zeitories but the reality is you can talk about nutrition but you can't talk about affordability from the angle our calories come from there if you go to our public distribution system which is our ration system you can see that your 90 % of your ration distribution what is happening 2 crops rice, wheat 1 % of the millets international year of millets celebrate the year of the millets so So this means there is a reason you령 back into this situation, where there is any reason dışarı岸 grid, but to et Month 2 thousand우독s haven't hidden, is the reason I am very sure that you work that
10:00You can then Gomorrah and Toleracer. either 8 thousand IRA, a basic principle to ensure your submission under the ответ to your equivalent答 behaviour. I do sayJust theXT diet. In행,
10:14because this juices well during our気öRe Shallow which 99 % says for 24 thousand inова I think that it keeps blessing to others for a person. so what the person said apple a day keeps the doctor away apple doesn't know 200 rupees kilo come out 4 apple family of four how do you afford it for one of the rice eat wheat so our plate we started in the 60s we had 20 % in the plate today we had 5 % the other things are starting to get started fermented food is starting to get started the chattonies are all getting started so our food which was the rainbow color is now single color so the 4 areas are our nutrition highs which is why we are today what are the problems of this?
11:07now the nutrition which my grandfather ate that nutrition I don't get into it what are the problems of this? what is the problem what is the problem we call hidden hunger hidden hunger hidden hunger is what is happening that you are eating food your stomach is full but your body is deprived so you get food but the cells are craving zinc deficiency, iron deficiency, protein deficiency so these deficiencies are calorie intake we have full of calories because we have calories come from here but these are not what is the result of India? if you look at India there are 57 % children who have anemia 57 % we are making a chandriyan 67 % women who have anemia and if we look at our office there are 3 ladies then there are 2 women who have anemia and people don't know how to know when they get advanced symptoms.
12:18So this is why hidden hunger is hidden. So this is the biggest problem. And this is just health problem. It's a very economic loss. countries have 12 % of GDP spend on their lives. If you think about the demographic advantage, dividend, India will be young, if our generation is young, then you think about the dividend. demographic penalty so that's the biggest problem that the hidden hunger is very widespread and it doesn't look like we have to eat we are satisfied so it's good but this problem and the practical impact is that zinc deficiency because of children stunted growth 35 % of children stunted growth physical not just mental growth not just So how many people would become a cricketer, influencer, podcasters, so we wouldn't give them a fair chance.
13:20They would be mentally stunted. Iron deficiency is important for brain. Iron is like our phone's battery. If you don't get iron, oxygen is not going to be brain. You don't focus on your cognitive development. not going to be. So, children don't focus not able to do it. There is no mental growth not going to be. Iron deficiency because of their biology. They tend to lose blood. So, the anemia has a lot of impact. They go through pregnancy and the children. This is why because growth stages is very harmful and it's permanent damage and it's going to go How do you fix this? There are two ways to fix this We are saying that our food system is broken and broken Now we can fix this There are two ways to fix this One is that you can repair it external and take it like we do we do vitamin A or desynthetically we are adding fortification we have said salt we have done iodine we have done the second the other the supplements but how do we fix it the whole country which you say is the crop it will better it will repair it it will fix it how do we fix it so I have said we have done repair we have done we have done supplements we have done fortification what do we have done fortification fortification we have done food in the food, premixes added.
15:07You know, in the milk, we have vitamin A and vitamin D. We have to add in the processing stage. So, people drink blood, they get vitamin A and vitamin D. Again, it's a synthetic product. And then you have to add recurring costs. When you do it every time, you have to add. There's another approach in which we work. The approach is different. It works on healing. It can be repair or healing. What is it? what is the core principle? like in our Bhagavad Gita internal transformation is the core principle true so I can fight many things if I can internally transform so our seed has a possibility that we can internally transform the seed internally in our way like yoga we say we can't put a Kundalini a dormant energy we can't put it inside it we can't coil it can be used.
16:01So basically seed we will upgrade the software so that when it comes to seed from seed, crop and nutrition automatically flowed in the whole food system. Once you have made seed then it will continue to grow years. So low cost is this approach. So it's a little bit of a name Bio-Fortification. Okay. It's a big name because the scientist has kept it. But the concept is very simple. Concept is As we are talking about Since the Siege sang It was nutrition We had two 강doing on day 24held
17:27future all around us. So, that's the concept of biofortification. But, you said two things. First, that we will do it for 7-8 years. It means it will be a long process. It will be for biofortification. It will be 8-10 years. That is one. Second is, if you do it all the time, you will find it all the time, you will mix it all the time. So, when it's so expensive, then again, affordability is out of the park. So, see bio fortification is not so much that it's because you have to see system costs in the other approaches you have to pay every time in bio fortification you have to pay on the research level and the good part is this bio fortification is not a startup idea is not a fringe science is not a today's idea it's not a 30 year it's going to be research and in 30 years in the world, there are more than 400 varieties in 40 countries in the country.
18:30So, our technology already has. We have built these varieties. India has zinc wheat, iron rich, iron rich, ICR, which is our National Agriculture Research System, has 120 varieties released. Bio-fortified crops. So, already is happening. Is average from how much? how much money is because there is no additional cost there is no additional cost farmer has no new practice like they have their food like they have their other beans same price and there is no new thing and there is a difference there is a variety but the money not the same price then who is the cost It's a cost. It's a cost. It's a cost.
19:24It's a cost. It's a cost. It's a cost. It's already paid. In this biofortification, there's already half a billion dollars invested. I'll tell you a back story. In the 90s, there was an economist, Dr. Haworth Buys. He was in Stanford. He had an idea. He had an idea. that we are spending all year so much money on supplementation and on fortification program people are eating rice and wheat so why not we build nutrition so this is an idea in the 90s so obviously when you have this idea of nutrition it means calories when you have this idea you have to push back so many places people have said that it cannot happen
20:46he got the funding they had a lot of work and then in 1993 there was a challenge program set up on bio fortification 10 years ago that program was started in 2003 that program was so big that it was a different organization called Harvest Plus and he was the founder of Harvest Plus and then he got a world food prize good price i storytell and our pro конце he had with the workshop he has a wholeon
21:34community that youру reviews ру reviews that you will generate the evidence to generate a strong evidence. So, the good thing is that it has been created for 15 years. In which you have Cornell, UC Davis, John Hopkins, the reputed universities and colleges, the research standard of the gold standard, RCTs, the randomized control trial, that was done, 20 % to more randomized control trial and all three things proved. The first point was that actually zinc and iron are increasing in crops. The second one was that it is increasing in bioavailable or not. The body will take it. The third one was that if it is absorbed so it is impact.
22:22So this was 20 years to generate a resounding yes answer. Yes, this concept works. it's absorption and it creates impact there are many studies in India in India in Maharashtra there was a lot of children in the iron rich so the iron deficiency was 64 % reversed in how many years? 3 months and in New Delhi there was a study I think 2 times they were eating zinc wheat jata tha 3 to 6 months ka study tha I'm forgetting the exact time and us mein unke pneumonia days 17 % taq kam ho gai aur unke vomiting days bhi 40 % se oopper kam ho gai to bachche joh school sick days ki wajah se nahin jah pathe te woh reverse ho e iisai zambiya mein baut interesting joh merhe ko personally baut interesting lagta hai woh ye ke waha pere vitamin A ki deficiency बहुत रहती थी तो वहाँ पर women को ये vitamin A maze है vitamin A से rich maze थी वो उनको खिलाई गई और उनके breast milk में vitamin A maze increase हुआ तो food का impact कैसे mother से children को pass on होता है तो बैट अब problem कहा है like what's what's the problem that you're facing क्योंकि अगर इस पर research ho chukhi hai prime ministers, presidents all around the world are accepting this international bodies ne award de di hai proven random controlled trials aapke paas hai and particularly I'm assuming ki agar jaysse aapne India mein kya her country mein kushna ko trials kare ho ga hai so that her country ka proof point lokalize level pe ye sab ho gaya and price bhi is not more and the amount of seed you will be the normal of your seed, the amount of price is your seed.
24:35Fortified seed. What is the problem? The problem is scale. Okay. If the price is not the problem, then why are people not buying? People are buying the better one. 60 crore people bio-fortified crops today are being eaten and eating 589 million people nearly 60 crore people people don't know that these bio-fortified crops are because mostly when we started our focus 589 in India? no globally 10 % in India 3 million farmers here in other countries so rich countries are ahead than us in biofortified crops seeds yes and no because of that harvest plus has never focused on rich countries because we are not for profit in Nigeria like Nigeria is a very big success story there is a 20 % vitamin A maze and how much of our in our single digit so So, if you go to Kenya, there is a crop of iron beans.
25:55Like we eat Rajma, there is a lot of iron Rajma. That is 13 % of its market share. So, how far is India? What do you think of? There are so many ministries, so many awareness problems. You're talking about money, which is almost the same. The yield is almost the same. Then, the major problems are solved. now it's I think policy and awareness problem India is only one decision away from being a bio fortification superpower of the world what is the decision? give 10 % incentive to the farmers for growing bio fortified varieties over the normal varieties who will pay the cost for the 10 % if you see you lose 4 % GDP from 4 % it will be very less than you will pay for it and this is not like that we have done the first time We have introduced MSP in the time of Green Revolution.
26:49So, rice wheat has increased. We have imported pulses to get into imports. MSP has given us. Oil seed has given us self-sufficiency. So, farmer's presentation doesn't respond. Farmer's price signal responds. The day the price signal goes,
27:10If you have a big push, it will be supply driven scaling. If you have no grain, which is India, it will not eat. If you have a lot of grain, it will go to your food system. As an organization, our interest is not that we have to make a bio fortification concept. concept bana دے جو صرف ultra elite اسے afford کر پا رہے ہیں یہ ایک approach ہے masses کے لیے population level پہ کام کرتی ہے تو affordability بہت بڑا factor ہے affordability تب ہی آئے گی جب bulk میں production ہو رہا ہے اور اس کا bulk میں consumption ہو رہا ہے تو ہم ایک decision away ہیں جس دن وہ decision ہو جائے گا but it's a chicken and egg problem it's like آپ بول رہے ہو کہ 4 % GDP میں loss ہو رہا ہے تو اب 10 % incentive دے دو now the question is we give 10 % incentive to do so how will we get immediate funds?
28:08And if immediate funds which are 50 % and other work in the country, which are the priorities that are left to it, what will happen to my country will get 4 % growth? What will happen? It's a check-in and a problem. When do we do first? What do we do first? I think there are many researches that tell us that our cost of good health how much we are doing. We are not doing so much. If we look at direct one-to-one benefit, I will tell you that the data when you invest 1 dollar in the way, you can invest 17 dollars as a system. How? In your productivity, your health expenses, which you are doing, you can provide protection.
28:59You can spend 17 dollars, that you have 17 times that you have return to your system. Explain a simple language. If a child is a child, that child eats normal seeds, normal crops, which is a rice, wheat, that eats, which there is no nutrients. And they are bad. So what happens to the brain? What is a deficiency? What happens to the brain? What happens to the growth?
29:58What is the most important thing? time पे उसके growth years में अगर यह deficiency है तो cognitive development बहुत seriously impact होता है iron में दूसरा जो thinking ability thinking ability focus focus नहीं कर पाते हैं बच्चे तो वो permanent एक आपने सोची उसकी learning outcomes change कर दी और वो साल उसके decide करते है वो आगे जाके क्या बनना था तो आपने उसका future change कर दिया a simple Bo construir anything anything I have our Wi-Fi like how attempt Our body is not UFO network not but Hello the biggest .
30:55because zinc is needed for building your immunity. It's the biggest app that is running our body. Then zinc growth is running. If zinc doesn't have to be a growth, it's stunted. Stunting is stunted. We have seen that 35 % of children who are able to reach their natural potential. They are not able to reach their potential. They are mentally stunted. Cognitively cannot develop. So immunity is where you can grow. Growth is where you can reach. is your skin zinc has thousands of factors on which it works skin, your skin problems diarrhea is associated with zinc deficiency particularly children's impact on a lot of levels zinc deficiency so that one had a normal opportunity to grow, to become something in life if there are nutrition deficiencies they seriously impact and what impact I am now that I'm a grown person.
31:52So like I said, all those apps you also need, right? You need to glow. You need to grow. You need to have immunity. So all those things. Same rules apply. But you won't be a growth stunt. Yeah, that will not be a lot of impact. Because you are out of that growth state. But you have the rest of the zinc impact, the zinc will not get the benefits. Interesting. thing and if somebody listens to this and then he thinks that I will change my diet or my food in my house and change my diet, why not do it? What does it mean? I don't know. So in the next 15 years, in the next 5-10 years, what are the consequences that person is facing?
32:38Or at least accepting that this will not happen.
33:09same thing be happy with my without micronutrients because serotonin dopamine you know these are not micronutrients so you can't see motivational video you can't get happy you will have to bring micronutrients in the body and zinc I have told you that these are the key apps their precursor in fact you eat protein also protein's two very jiggery friends zinc and iron protein also you eat metabolize not in body if zinc and iron not. So, those three degree are the other way around work if you eat protein not absorption not but the food metrics we talk about any nutrient if you have other nutrients have a strong relation or absorb or transport or then as a metric we have to keep it otherwise we have law of limiting factors what of limiting factors what happens that you have the abundant that you have your performance will not decide what is not that you will decide interesting so body exactly so if you have protein you have you have a sweet spot and you will not have more protein you will not have iron so that you have performance down zinc so that you have performance down until unless you that you have full then you will never completely disclaimer again not a nutritionist tell me protein there is a lot of emphasis in India which is a good thing but you said something protein is more emphasis which is problematic I don't have any problem from protein only there is so much protein first of all in India protein inadequacy we need to have protein and its cause is the surprising thing is India in India the rice and wheat rice and wheat is 70 % of calories and our protein is coming from there so if you have so big dependence on cereals and then you have to break your plate so you have to have a pressure on your protein plus the vegetarianism and other things which are inadequacy and it affects but in protein Paradox exists.
Read the full transcript
35:38Paradox is that generally which people have more than the elderly, rural populations who have either this thing knows or they have not paid. And those who are right, they are obsessed with obsession. So people are going to trauma, my protein is not full. So two things are going to happen here. Those who know they are trauma. Why don't we do not know better than we speak ? I do not know protein... We are not convinced now. There are a lot of people who are convinced not to occupy it. Cut a protein paradox the other one. And the other thing is that Repeated andius
36:22Why do you mean deadly? We will fixator on protein Whatever is wrong foodỡ Buy 12 gram
36:36I think it's healthy. Suddenly it feels healthy. Health washing is getting protein washing everything. And another problem is that now there is protein in every thing. There is protein in coffee, there is protein in your chips, it will come in some day. In the water too. all the protein in our cheese so I think one of the stages will be that people will forget to forget it, how much they are eating and they will start hitting the upper limits and start hitting the upper limits what is wrong? I'm just asking how much you eat after that, at this point India's diet is like that it's very difficult to overdose but it's expensive, you're flushing your money also after a limit who can afford it yes, that's the thing I'm sure which are eating all the protein from chocolate, from a hata, they are the ones who can afford it.
37:31Let them. Yes, if you are only eating protein, probably it might not be correct. Because, look, protein, again, I have said, nutrition is orchestra. You cannot fix it on one nutrient. You have Abhishek Sharma, a very explosive batsman. You cannot only win the World Cup. You also need Sanju Samson. You also need Hardik Pandya. You also need Boomera. I need to do all this. If you have protein eating, what is happening? The rest of the things are ignored. The focus is not focused on the health of protein. I told you that any product is a product, you can write 12 grams. It started to pick up the rest of the protein.
38:11What is the rest of the protein? Is there any micronutrients? It's not on the attention of protein. The protein is being a sole indicator. This is India's problem. This is our very big problem. You know, we can only build our 5 % nutrition in the kitchen. Just in the kitchen. Just in the kitchen. Like this? My framework is a fuss. Okay. I will say, in the kitchen, you can create a fuss. You can get a fuss in the kitchen. The first magical technique. By the way, these are old techniques. Nothing new is not. Fermentation. F. very underrated very big system you can 2-4 nutrition can increase idli dosa north drink canji when you ferment it's phytates which are anti-nutrients which are released it's nutrition 2-5 just by fermenting use whole food food if you eat something, don't eat anything if you can't eat it, it's different if you eat it, it's a lot of vegetables people are making vegetables in Kerala, West Bengal, Assam they are making vegetables okay, that's weird but okay usual vegetables you are making the water in the house that you have made in the water you are eating watermelon watermelon and the seed is so good and the root of the root the rind is the whole so, before we started very few parts to fake it because the nutrition which in the cereals are in the top part mostly so, when you put it or you put it or you put it or you put it then you put it minus also So use whole foods as much as you can.
40:19So not juice not to make fruit. The third is soaking and sprouting. It's very hard. It's slowly becoming less. You have the honey, the leaves, everything you soak, it's got phytates released. Sprouting, you know, there's activation in sprouting. It's the best because it's new vitamins. Because it's a new plant So soaking and sprouting If you are doing nutrition You unlock nutrition Last is switch Food is going to be Our grandparents don't eat the same food Five kinds of leaves were made in five days We are going to fix it We are going to fix it One kind of food is eating Which is not rotating There are two benefits When you rotate the food There is a different fiber The gut microbiome I'm a touristy type.
41:14I'm looking for different places. I'm looking for different things. So if you do 4 things, you create a little bit of a kitchen. So you can increase your nutrition without any effort. You have got a budget saving. On this one, there's a bonus. What? Surah Namaskar. Surah Namaskar, many people don't do it. Why do you do it? vitamin D کی deficiency is in India some 70 % 90 % but there is a lot of deficiency vitamin D but if you can't eat your food what do you mean what do you mean which mushrooms eat like our skin sunlight vitamin D make it mushroom mushroom's skin, sunlight's skin, after vitamin D, can be made.
42:16I didn't get it. Put the mushroom in the water. 15-60 minutes, if you cut the mushroom, small-sized, and cut the gills, you keep it up, you keep it up in 15-60 minutes, you add 30-50 grams, vitamin D, 30-50 times. You can Google about it.
42:39So one good da some vitamin D from the pill is where vitamin D2 happens because we have to get shorter
42:57mushrooms to go and knowledge
43:07too There are many commercial companies that do commercially treatment of sun-soaked mushrooms. So, there are small tricks that you can do in the kitchen. So, there is a kitchen where you can learn nutrition. Tell me, what are the early signs that a person sees inside and avoiding? which will eventually cause some major health problem and that is why the early signs of micronutrients are missing because of that fatigue, focus you know, I think that stress is because of that many times or many children think about it, why not understand it, why not attention is not being distracted why is it being distracted like nowadays, fashion agency is very distracted does 그대로 fit China.
44:00Boko to d predominant II a second You When you lastly nausea you have rank like Drieg skin dull or glow Your sign is給 給 depending on the micronutrient what you're doing in your body what you're doing the body always gives you a signal if you're off notifications then you can't do anything
44:35is it just asking hypothetical question that whoever has nutrient problems like micronutrient missing those people monthly or quarterly can't get injections or drips because that's a fashion and a very tier 1 top of the level people right have you seen that i have seen i've seen iv drips and all that like i said i don't come from that profession so i don't know the exact science and how does it work but given a choice i will rather prefer the food for the benefits it brings like i said supplements supplements for some reason they are supplement to something so but in cases you are not able to meet your dietary choices you are vegetarian you are struggling I don't see anything wrong with taking supplements as long as you know Raj my philosophy with food is I am not a health nerd I don't track calories I don't track protein I don't track one side I occasionally indulge and and I have told you that I have made weight lose for 15 and I am maintaining.
45:52Can you tell me about that? Good food. Like I said, fuss. I told you my secret mantra. We are eating a lot of fermented food. We are eating a lot of millets at home and sunlight. And I think I have been living like a farmer. What do you mean by that? Explain. So again, I get a lot of farmers. I get a lot of farmers. you can actually eat like and live like a farmer that's the best way to do things farmers what did they do? they had two times they had two or half times according to your lifestyle you can choose they had to eat seasonal or fresh a lot of sunlight movement that's non-negotiable you can't be healthy you have to have a good movement होनी चाहिए stress आज की दिन में अगर आप आपका घर खुला छोड़के नहीं जा सकते farmer अपनी फसल खेत में छोड़के सो जाता है सो जाता है वो जहां पे pest भी घूम रहे हैं जहां पे जानवर भी घूम रहे हैं बारिश भी है सब कुछ so that's so good the stress manage their ability so if you can you should live like a farmer I'm not saying that they start eating the food if you're a sedentary lifestyle but there's a lot that you can pick from but how can this happen this stress where a lot of people don't care about what's going on in life the way probably according to you what farmer is doing who's going there It can be true for a lot of farmers.
47:33It is true for a lot of farmers. I think again, this is also a community way of living. Where you have a lot of assurances. You were living in a big family and a big family. Which becomes your sports system. We are getting into nuclear families. Where you are on your own. Success is your own. Failure is your own. Everything was made of community.
48:10and I think that is the main cause that stress people have to come because there is loss that is village you know people have to get married so they have to get married they have to get married they have to get married contribute they believe in that system of community so do you still go to your village i do you do have you seen come jana but but i'm trying to do it in our small land parcel nice you go there i go there right so when you go there have you seen that people have lab made seeds for taking them easily but these are not lab made seeds okay so is it like somewhere no these are not lab made seeds at all it's very important you asked bio fortification are farmers doing it plant breeding which is bio fortification is called conventional breeding this is the the the the the the the the the the the scientists are starting to do it they are farmers I will tell you a example do you eat gajar orange gajar orange orangey, white halwa, white halwa if this plant doesn't have a breed.
49:30Gajar never had orange. Gajar was black, yellow, white. Orange was little but mostly this color of Gajar. I thought it was orange. Like a reddish orange. What happened in the 16th century? Dutch farmers has been breeding yellow carrots. They started breeding orange carrots. That's why the carrots were orange carrots. They were very sweet. They were very sweet. They were very uniform. They were also more than the yield. The same concept that we are thinking about biophotification today. They started breeding. There are two reasons. One was the other reason. political but that shows that politics also plays how important role plays so William of Orange was a national hero who was when Spain revolted in that he had a lot participate in that he had a tribute to the Gajars to orange and now the Dutch national color is orange so this Gajar became orange one is the traits and the other he wants to make orange of orange.
50:50Long story short. Now, you have to eat this process that farmers have selected them to select the orange. It's interesting that the green was coming. It's coming. It's coming. It's coming.
51:13The blueberries as Papacou can rivers our Iditar
51:25dadurch just экономically. There was a
51:54две India में मिलेगा और Kanji आपको और उसकी वज़ा से Kali Gajar अभी भी retained है वहाँ पर जो Orange Gajar है उस खाने problem है नहीं कोई problem नहीं उसमें beta-garotene vitamins होते हैं अच्छा लेकिन क्या it's not a chemical process it's not a chemical it's just a story that you told me about how they changed आपने एक trait को prioritize किया beta-garotene को आपने prioritize किया vitamin A reach that is the time which you will have to do with vitamin A is a very important thing. You know that India every year 50 ,000 children are blind because of vitamin A deficiency. 50 ,000 kids start with night blindness.
52:41Vitamin retina is a pigment that it needs to be when it doesn't have vitamin A diet so they have night blindness when it's like in the evening they can't see it and then if you ignore it then they have permanent blindness tell me more about foods and these vitamins let's say sweet potato I saw that orange sweet potato orange flesh sweet potato OSP it's vitamin A again sweet potato is an excellent food is why we are talking about it. We also talked about it. There is also a sweet potato. By the way, it's a very important food. So, sweet potato is energy. It's fiber. It's a staple food. So, in Africa, there is a lot of orange flesh sweet potato.
53:32So, in Africa, there is a staple food. So, in Africa, there is a maze. In India, we don't do much work on the maze. There are high iron beans. So, there are different crops. process is that our concept was bio-fortification priority index. It's a little scientific idea. The idea is that which one should do. You can't run after every crop. You can't run limited budget. So, what should we do? So, you need to put these crops in the same way. The staple crops are there. Where you have maximum nutrition. One criteria is this. Another, you need to put nutrient in the same way. You need to put the most in the country.
54:11So, you decide that here. India is wheat and zinc. I build a variety of it. Okay. So that's why what do you do in India wheat, zinc and rice? Zinc and rice again. Okay. Iron. It goes to bajra and lentils. Only these two particular vitamins or micronutrients you focus on? Zinc and iron. So worldwide there are four micronutrients major deficiencies. Iodine, zinc, iron and vitamin A or iodine we iodine we are getting from salt so that's more or less salted these three are now coming through biofortification interesting so these vitamin A blindness iron is cognitive and anemia zinc is wifi very interesting analogy that the whole body okay and then fourth was iodine iodine yeah which was your thyroid or goiter and plus mental and you know nutrition approaches work another way is to do biofortification which we are talking about agronomic biofortification I have told you do yoga, do not go to Kundalini, do not go to Shakti do your software update the seed another concept again from Indian philosophy only that is vastu vastu vastu what do you mean what do you mean right architecture which we align what do you mean seed what do you mean what do you mean seed what do you mean we have talked if soil we have zinc not iron not then seed where we pull not then if we we see to take care of it.
56:07We can take care of it. We can take nutrition in our food. So, for that, there is a very interesting story about Finland. In Finland, in the 1970s, many people had a heart attack. Cardiovascular problem. Highest in the world. They were happy. No, they had a research question. One of the key reasons was that in their mid-tie selenium is not not. So selenium you need your heart health to your heart. So they had a decision in 1984. They said that you can't be able to any fertilizer if you can selenium is not added. add one strong decision and you can decide that you have to add five years after results the three the three two the two the on his blood serum and he got this response a decade later 75 % drop in cardiovascular disease it's one of the big success stories of that problem solve you don't need to go to pharmacy now you can go to the farm problem solve interesting and And this is a very big success story.
57:57Tell me about more countries and what those countries have done in order to tackle their food problem or deficiency problems or whatever other problems they go through. Like Kenya, Kenya, you know, iron deficiency is working on high iron beans. Rajma, like we eat, it's one staple. So they eat it. So they're promoting it in school feeding. That in school feeding, beans. There was a problem that was the beans. Because it was low supply, so they were hungry. They were two-guna price. Neota was a variety that we released. We had double price. Kidney beans? Yes, they were kidney beans. So if there's any intervention on scale, So, the first job of being a big deal is budget neutrality.
58:51And beans are also very interesting because of that. We had to use high iron beans because it was more than iron. But the kids and teachers liked it differently. There is a big social risk in Rajma Chawal Khan. You become a big deal. You get a lot of gas.
59:13So, flatulence was one of the big problems in the beans. so this was unintended so we made the variety and the biochemistry of this change in that way gas was reduced so people liked it another beans one thing is that beans cook it's a little time this variety it's a little time so ladies they adopted it it's a lot so a demand pull some times we work with many things we say that our products are stunted but we have a gen z person his brain fog is fine so beans are very popular so this was a big problem so then we have 3D bottle necking agriculture university which is a seed system that was fine and And fast forward two years, his budget neutrality, Neota beans, normal beans' price.
1:00:21So for a school, there are a lot of organizations that are involved in the innovation to scale that. Because it's a very good innovation for children. Interesting. Tell me, how can we help? Everybody who's listening to this conversation, how can we help in making sure that nutrient-rich food, everybody starts eating much faster than what probably you must have projected because it's good for our country it's good for ourselves, it's good for our families I think power toh sari communication me hi hai communication is needed the first thing you can do is that my 15 ,000 ,000 kids who probably will see you can give a shout out you are the future, eat well so I was just telling you about Nutri Paatshala there is a very interesting component is, we call our Nutribuddies.
1:01:15So, these schools we work in, there are colleges, agriculture, food science or nutrition colleges who are volunteers who come to us. We train them. Then, they spend 20 hours with these children. What was happening with these children? We don't listen to this parents. We don't listen to this uncle type. We don't listen to this uncle type. We listen to our elder siblings They listen to us because the generation gap is less. At the beginning we struggled to understand them. But they know that they don't have a face. Then we thought about how to do it. Teachers are of course we train them. But teachers have a different relationship.
1:01:56They listen to them. But they don't go home. But when we have a concept of Nutribudies, they go to schools and they have gamified nutrition. They teach them, that why we have to eat the millets in an entertaining way we drink that sugar and we learn how much sugar is so the NutriBuddies is a core spine in our program for the kids same age or in the final year or graduated from college they do a volunteer exercise so one thing we can do is that like I told you Gen Z is going to fix this system I am so positive about it this is the smartest generation that we could have ever got you need more of them to join you we need more of the Gen Z to take the lead to ask questions see what happened in our time someone said that glucose biscuit is healthy we accepted someone said that this drink is healthy we accepted liya हमें जो बोला गया हम मान लेते थे ये वाली वो generation है जो they flip the packet पीछे पढ़ते हैं दबा के question पूछते हैं और creators भी है अगर नहीं कुछ समझ में आया तो फिर founder को ले भी जाते हैं corner में 6 गंटे में सीधा भी कर देते हैं yeah so this generation is the very powerful generation and interesting this is that we saw that people are asking people and reading labels and Gen Z is getting more inclined towards the natural label where natural nutrition comes from so I have a hope that where the food system will fix the problem of getting there Gen Z will have a huge role to play all they need to do is just start asking question where is my nutrition give it back you have no right to take it away from my plate true and what's next for you where do you where do you see yourself going forward I'm thinking we dreamt small we would have had bigger dreams Dr.
1:04:17Haworth Buis his dream was that we will reach 1 billion people until 2030 we are already at now 589 million so I think we will burn it. So now it's like a small thing. It's like a dream. I think there's a lot of work to do. What's your biggest fear? My biggest fear is someone destroying this innovation by making wrong claims. Explain it. It's like when we came to the routine, we came with a very good intent. We had a need. and then we saw all kind of things right there are people who come in make claims which are not fully scientific and then they that that start hurting the category at some point of time and this is this is this happens with any science and my second fear is we have started celebrating storytelling more than science and that's something that worries me like I ask people to ask that tell the names of the top entrepreneurs of this century tell the names of the top entrepreneurs tell the names of the people tell the names of the people common Jeff Bezos Mark Zuckerberg the usual suspects Elon Musk Bill Gates Steve Jobs and then my second question tell the names of the five scientists of this century
1:05:51and generally there is silence I ask someone to say this question I ask India so in India people also tell us Adani Ambani so they know I ask 5 Indian scientists tell us so very rarely I think the last memory people have is Dr. Kalam people can tell us about K7 Rattan Lal Gagandeep Kang Gagandeep Kang Gagandeep Kang Because we don't celebrate science. We celebrate storytelling more. If you see our innovation ecosystem, we only file 80 ,000 patents in a year. China does 16 ,000 ,000 ,000 ,000 ,000. So where does the difference come from? The difference comes from how you can prioritize how you can do science and innovation.
1:06:49If you see our country, if you see R &D spend, 0.67 % countries like South Korea Israel 5 % spend and private sector if you see we are 2 % of our R &D spend how much marketing budget is in some cases 40 % 18 % engine car is very beautiful metallic paint engine is in so we are making beautiful cars with no engine that's my biggest worry a country like us has to prioritize science and prioritize innovation marketing is not bad but then you can't market if you don't have an idea if you don't have an innovation if we are going to work tomorrow, probably our growth will go but if we don't have science, we will not have civilization so I think people need to celebrate science more interesting tell me one last question fill in the blank India
1:08:01will not be able to grow if dash
1:08:08India will not be able to grow if we don't stop the nutrition heist but it is on four levels you said the nutrition heist there soil level crop level factory level and then plate level right so you are addressing crop level soil how will they do how will they understand what will they do after the plate I think we discussed that there is a lot of awareness that's needed about that's coming factory level is consumer factories are like Allah Deen ka charaak joh consumer maangyega woh vahe deega aap jab unse taste maangyere ho to aapko taste dee reha jis din aap nutrition maangni shudru kar doge to a nutrition woh jhak marke dhundke laengke bio fortified variety aapne ingredients mein dalne ke liye and mark my words bio fortification is going to be the biggest category in next 5 years hmm my estimate is it's going to be 20 billion dollars in India alone and if we play it right India has an opportunity to become the affordable nutrition hub we have all the pieces uh India do teen cheezo mein uh you know innovations mein jo bhot achcha gara one is seed system the seed systems in India are really strong so that's the basic piece that you need for bio fortification your captive consumption is large and third you have a problem so you have the customer you have the context you have the capacity you have the capacity this three things should be in our consulting so I think we have all the basics to reach there to answer your question law of limiting factors you can't leave anyone you have to eat four you have to eat four soil we need to fix it if our soils are dead we are doomed seed we are doing through biofortification factories the consumers, Gen Z has to play a huge role, ask questions keep flipping the packet say that which photo of celebrity is not important tell the science behind and the label tell the two things and then kitchen is very much in our hands perfect thank you so much sir thank you, it was a pretty straight conversation, it's been such a long time where i've had this kind of straightforward conversation where i don't have things to ask i just wanted to just understand and see and hear you what about the things that you were talking about and it was incredible to hear that in fact i really like what you're doing so all the best to you as well and kudos thank you for so much for this conversation Thank you very much.

In today’s episode, we sit down with Ravinder Grover, COO of HarvestPlus Solutions, to talk about nutrition, hidden hunger, and why food today is not as healthy as we think.
We discuss why your roti has lost nutrition, what deficiencies are doing to children, and why so many people are now talking about protein. Ravinder explains hidden hunger, how millions are affected without even realizing it, and the body signals most people ignore.
The conversation also covers how biofortification started, how countries like Kenya tackled iron deficiency, and why India is still lagging behind. He shares why scientists often go unnoticed, the biggest risks ahead, and why one policy decision could change India’s nutrition story. This episode is about food, health, and the gap between what we eat and what our body needs.
