0:57Jason Stewart:We're on the island of Sicily Off the coast of Italy We are in a town called Scopello Which is outside of Palermo On the northwest side of the island Wow, okay Carmen Sandiego, thank you for all that info I'm mapped up, bro Don't fuck with me, I'm mapped up right now Don't be holding a treasure. I learned about, I got to see a little bit of Palermo yesterday because when I landed from London after a connection in Rome, I got into a cab and told and physically showed the driver the address to where we were going. And I obviously put my headphones on, started listening to a podcast, watching some reels.
1:50then i pull up the google maps app just see where we're at how much time we got left and the driver has gone 30 minutes in the wrong direction into the city of palermo oh okay and he tries to explain to me in italian that the road that our hotel on goes far he's like oh i'm like yeah bro but i showed you the fucking number i know roads can go
2:12Jason Stewart:far he was saying instead of going left heading west to your hotel along the coast why don't we head east and then it is an island so eventually it will loop around all the way i was like bro it says turn around and he kept trying to argue with me and then i was like i think i know where i'm going yeah i was like i'm not going to argue with this guy because i feel like if i get too mad and i'm like let me out i'm really fucked which is where i would take it and then at the end when we finally got here and he you know charged my card for 160 euros for a fucking cab so this was this was a taxi not an uber this is a taxi yeah and and so there's no way to dispute the charges but he kissed he kissed me on both cheeks and apologized he like hugged me and was like i'm so sorry and i was like double cheek kiss i was like bro it's not that serious but okay thank you and you were like you know what would be a real great cheek kiss knock off 75 euros you removed the money that you took from me they but you know what you added an error for some reason i was i was proud of myself for not getting too angry and the situation didn't escalate well and i feel like that's growth is that i mean on the on the heels of alanzer hoff maybe you're mentally preparing to reach some sort of clarity or peace in your mind nirvana no teen spirit that's the idea okay yeah i had a i had a similar kind of upsell incident the night before we we left as well Of course, staying at the beautiful Hotel Casa Maria Luigia in Modena, Italy.
3:50Jason Stewart:Home of balsamic vinegar. You know that, Chris. Aged. I saw barrels in that cellar. Older than me? 1969. So you're telling me they got some balsamic vinegar in there. How much is it hitting for, though? That one's 56 years old. How much are you hitting for? shit's older than almost it's almost as little as the guy from tmz for a couple drips though or do you gotta buy by the bottle i don't know if they charge by the drip you know because like truffles they charge by what is it ounce right i think you would have to buy a bottle of it yeah but i gotta buy a case no not a case just a bottle but you know they'll definitely go hundreds of dollars for bottles and and excuse my ignorance i'm happy to educate how how different do you think the taste would be of a 56 year old balsamic vinegar versus a balsamic vinegar that you get at cookbook and still costs you know a measly 12 years aged yeah for example junior shit it well the difference between aging wine and aging vinegar is that it uh it gets thicker with time so like your standard so it looked like you're saying this balsamic vinegar looks like lean it looked like like high tech it looked like no this is this is beyond high tech this is this is talking about we need to when you see the exxon spill on the on the seagull and we have to use harsh chemicals to scrub that's okay so if i got a baby seal is covered in black that's what it's a thick molasses oh wow i mean the older it gets the more thick it gets but it's a type of Think of it as like honey being drizzled out of a jar.
5:35Let's say I pony up for the 56-year-aged balsamic vinegar. What is the perfect place to use that where the flavor will explode?
5:45Jason Stewart:Another fantastic question, Chris. Well, the brother is balsamic and the sister, parmigiano-reggiano. Okay, so the best thing would be a... scrambled eggs. You'll get the big hunk, the big wheel of the Parmesan and it could be aged a number of months or years as well and they get a little chisel and knock a couple irregular shapes off of it and then a little drizzle of that on top so you get the sweet, the salty, the bitter. That's the purest form. That sounds pretty good. That's the Italian version of no soy sauce. This is just, ironically, it is covered in sauce, quote unquote, but you know what I mean.
6:35Jason Stewart:It's just the two greatest ingredients paired together, like uni on top of my Wagyu, perhaps. Of course, of course. If we want to take it to Vegas, yeah, that's where we're going. This has got caviar and uni on it. That sounds really good, actually, and I don't think I would be able to tell the difference of the age, except for the consistency does sound quite different. The viscosity is kind of to the untrained palate, and I'm in that category as well. I'm not a balsamic master. Yeah, but usually you'll see it. One of the barrels, I think, was 1980-something. So, you know, let's say it was 40 years old, and there was a little bit of a slick.
7:13Jason Stewart:Like, it was dripping down, and there was like a little puddle of it. And I, you know, dipped my pinky in it. You did a gummy of aged balsamic? Yeah. I mean, it's delicious. In the morning at the hotel, every morning you go and there's a big buffet and they can do a tasting menu of their breakfast treats or you can hand select them. But they always have a couple frittatas of the day. Of course. And they'll slice a couple triangles off, bring it to your plate, and then they drizzle the balsamic on top. So that goes quite well with like a caramelized onion. Oh, sure. Okay. That makes sense. Maybe a quiche, you know, depending on.
7:53It's playing in the quiche space. That sounds delicious. That sounds great.
7:57Jason Stewart:I mean, so spoiled. In the lap of luxury, everything that you would ever want at that hotel is right there for you. A little bit of a contrast from where we are now in Sicily, but where wouldn't be a contrast? A contrast, but I would like, I'm sorry we got sidetracked with this vinegar story, but you had a moment where you thought you were somebody and then they let you know that you weren't. Okay, so, well, that happened very quickly every time I go to this hotel. That happens every day. When you drive up and then it's like Ferrari, Ferrari, Ferrari. And here go my X1 with a dent in the back corner.
8:35Jason Stewart:But happy to be in a beautiful BMW, midsize SUV. But we go, there's a new restaurant that had been built. And since we have last been at this place a couple years ago, they built a whole new wing. there's a new restaurant called uh il gato verde which i guess is the green cat oddly enough the restaurant we had in modena was called la rana which means the frog so they play in the animal space over there in the country as little freaks and i was i was exploring the train i didn't see a single frog or a green cat but that's why maybe that's the whole thing it's like things they don't have the forbidden fascination that was that was a little more french than anything if we were um i know so we go we go in there like oh did you um make a reservation at the new restaurant and we're like what the fuck are you talking about because they have the the traditional austeria francescana which is like the jack off three michelin star you know is it and the new one is more casual the new one is a little more it's a regular restaurant where you go and you order up the menu and they bring the food and you eat it kind of type restaurant versus uh the other one it's like you know a chef comes out and then everyone there's 11 waiters and they lift the the lid off of the plate in unison and everyone's crying and taking photos every dish has a speech and sure this is the story of this egg you know whatever it is but so we did not have a res we go on the last night that we're there, we go eat and have a nice meal in the town.
10:16Jason Stewart:We come back and we're like, let's just, Carolyn wanted a little dessert. Let's just go to the Gato Verde and see maybe they can just grab a little dessert at the bar or something like that. I know we don't have a res. And instantly the GM is just kind of laughing at the idea of walking in. We're booked up three months solid, bitch. That kind of thing. And I was like, that's fine, we'll go Tail between the legs There's a kitchen in the hotel Tiramisu You have dessert options Many dessert options That are for free To be clear, they're included in the price Of the not inexpensive Tutto dolce Available And then we're about to walk Into the kitchen we just we just get into that tiramisu we just skipped the 37 dessert that was probably going to let us down you know it's going to be a collection of cubed fruit gems and like uh whatever blah blah blah some dehydrated cherry foam powder and then one of the women that works at the hotel intercepts us interception right before we walk into the kitchen we heard that you wanted to try some dessert but it wasn't available and we you know we know that you're a special client and you like the food so we talked to massimo at the onsteria francescana three michelin star tasting menu book at a year in advance place and they said they might be able to prepare dessert for you and and we're like oh what a delight that's so nice wait here i'm gonna run back to the restaurant and see if it's the green light or not so we're you know having a Sig on the patio enjoying the garden at night.
12:07Jason Stewart:Oh, last night here. What a time. Blah, blah, blah. And she comes back. Okay. The chef has agreed to do it. We're going to bring the table setting outside. They set up a table for us. A lamp, an ashtray, place settings, knife fork. You're just setting the stage. It was a full. They set a Michelin level place setting outside on the garden as if we were the Hadids or something like that i was treated like royalty and then they're like okay the the we have the oops i dropped the tart which is his famous dessert where it's a deconstruction a lemon tart got it which he has made millions of dollars off of yes you can watch videos of it um it's a fun story or and then they have this like cherry dessert which local cherries that they turn into a gelato and then there's this dark chocolate mousse i'm just not a cherry guy i'm a big cherry guy i'm not a big i'll show you a picture of it you know it looks it looks like the 90s in a good way it's a geographic collection of powders and foams and colors a lot of powder and foam and color and then she so the server is like you know which one do you want and i've already had the lemon tart so no necessita so i was like oh the cherry one sounds good and right before i said that carolyn was like oh i think i'll get the tart and i say okay you want the tart i want the cherry i'm sure it's just going to be a small little thing run it run them both why don't we do both and then the server is like okay well do you want to do you want to look at the price of the dish and i was like no it's okay like what am i gonna do yeah say oh so oh that's how much it costs take the table away take the lamps take the place settings away go tell the chef not to put all this back in storage and i'll i'll just go this is already we're already a half an hour into this whole procedure i can't pull out so i said we'll get the dessert i'm sure it's you know whatever and then at the end you know we eat the desserts they're fine it's okay 120 dollars all right so so it was 60 per dessert each dessert was 60 then this is euro sorry not dollars we're hitting a little closer to so yeah 120 is more like 140 something like that and you're saying that but okay i you're saying they were okay do you think the price affected your feeling about it be honest absolutely okay that's that's that's i i understand that completely i understand i mean the i i'm okay with spending 60 for a dessert as long as it's uh you know eyes in the back of the head toe curler ain't never gonna forget this dessert on my deathbed type shit but the expectation is so high and the chances of that happening are this i heard a story a dessert related story let's get into it i need more energy jason i need more of everything and i'm kind of sick of feeling sluggish i'm sick of feeling old and anything i can do to help myself feel better i'm gonna do and if i can get that in a powder from david beckham i'm damn well gonna do that a lot of the powder companies out there we're adding them to our drinks and as the years go by they just kind of keep getting better and better and we learn what works and what doesn't work on a scientific level and they're over here at the University of Oxford doing some studies with accelerated aging longevity on board the International Space Station.

The rumor is, which I love, is that the Nemesis is impossible to replicate, and they've maybe left out some instructions in the recipe to kind of keep layman's from being able to replicate it at home, so they keep coming back to the River Cafe. I wonder if they change the ingredients amounts as well as, you know, oops, I skipped a couple crucial steps. I was like, that is the coolest thing I've ever heard. And I'm sure it's more common than I realize because I'm not a cookbook connoisseur. This seems like a great sub-stack post or a TikTok or a YouTube video of somebody who's like, okay, this is the rumor.

Which is kind of my dream cookbook because there's stuff to look at that is because i'm not going to ever make any of the dishes so i'm happy to have this and i will actually keep it with cookbooks i usually flip through it and then give it away because i have no use for it but this is a nice this is a the idea of a lemon only cookbook is is interesting i wonder if they have an overabundance of lemon recipes or if they really had to kind of stretch it out i also i have a struggling to make a hundred pages.
23:25It's small. No, it's thin. But I haven't been able to... I didn't open it because I didn't want to open it and then carry it in my bag. You know what I mean? Because it's in the cellophane. We would just have that for lunch. It's too hot to eat. The only thing we could consume was this frozen almond. It was so good. That sounds really good. Maybe we could try and track some down for lunches. Actually, no, you're off dessert. I'm off dessert. Even though that's just a collection of almonds and ice and a little sugar. The sugar is what gets me. And then they just put it in a thin, they put it in a sheet pan, you know, real thin, freeze it, and they scrape it with a fork like you're Lil Yachty working the pot.
26:01Jason Stewart:I like that. It's a great example because Lil Yachty ain't ever worked the pot. That's what I like about that. Like you're Pharrell and the Clips, you know, how Pharrell and the Clips always make crap. I can't believe we're in Italy and we're missing Clips, John Legend, and Pharrell playing at the Vatican. 29:05Jason Stewart:Which way Western man clips at the Catholic church or turnstile at Tiny Desk? The turnstile argument, are they hardcore? All this shit, I think it's stupid. I think they're a band, and if you like it, you like it. If you don't, you don't. I think it's cool that they're popular. We've talked about it a lot. You watch them play. They're a hardcore band. You close your eyes. They're some 41. It doesn't matter. It doesn't matter. We're both there. But they did an NPR Tiny Desk, and the singer of the band stage dove inside the NPR offices, and I thought Tiny Desk had been killed and warmed over several times over the years.

But I'm trying to think about classic ones because there are some. I guess. Well, when people can really sing and they do it in an environment like that, it could be anywhere and it's impressive. But when it gets too popular, you start doing one every day with whoever's around. Yeah. I'm thinking about the Clips was really good because they didn't use a live band. Right. And it was actually cool because the song sounded like the song should sound. Whereas Turnstile Stage Diving is... I don't know if I can think of anything more performative. yeah but i i will to play devil's advocate um would it have been okay a couple questions would it have been cooler if he maybe was a in a head walking situation instead of a little stage dive yes yes okay yes and i didn't think that through that would have got the ball across the line for you but then the other situation is you're you're you're swept up in the moment your band is playing tiny desk we we made it we came all the way from baltimore to dc so it's a it took a 37 minute train ride it's a train i see what you do you get swept up in the moment okay okay other question do you think that this was you think it had to be pre-planned it had to be pre-planned the crowd isn't usually situated like that this i would say that the crowd pretending to quote unquote, you know, do the NPR version of a mosh pit.
31:59Jason Stewart:That is more upsetting to me than him jumping on it and being carried for 11 seconds. I don't disagree with that. But there's a lot of people to blame here. And I don't want to pass the buck. Like what's more cringe to you? Being turnstile and then having to call 11 of your friends to be cast as the mosh pit? or to just work with whatever you got in terms of the NPR office employees. And I think a loafer, like they try to make a thick sole. Not even eel. Yeah, I just don't love it. Let me pull up this eel skin loafer from the row. I mean, it's popular. We know plenty of people who wear them. I know I've seen it. I don't think they look bad. I just think that why not wear a regular one? Like, what is the – I mean, obviously, these are very expensive. But my stance is also if you're buying that kind of shoe, you should buy it from a very traditional shoemaker.
36:48Jason Stewart:Okay, yeah, I'm looking at it right now. Yeah, I mean, it's – to me, it's not a daily driver's shoe. It's definitely a statement shoe that you wear for – but that's what i think does he have them in black or brown i think black probably black yeah the brown's a little weird color too yeah i mean from far away the eel skin it just kind of looks like a bunched up leather yeah i just don't confuse the eye it's just not for me but you know when when they're testing out new cars that aren't out yet and they wrap it in that weird black and white geometric pattern that sort of it's meant to you're getting a similar feeling I'm getting a similar effect from that shoe, which is only making it hotter.
37:28Jason Stewart:But I think that they're a good couple. Do you think she's getting him to smoke more? Or do you think he was already chiefing? I'm sure he was. Because I know she's a toker. Zoe Kravitz is a real celebrity. That's what I like about her. She always has sunglasses and a hat on. She's got her wired headphones in. She's smoking cigarettes.
